Veggie Cheese Omelet from The Biggest Loser


Ingredients:


3 Large Egg Whites
1 Whole Egg
2 Tbsp Fat-Free Milk
1/4 Cup Chopped Red Bell Pepper
1/2 Cup Chopped Yellow Onion
1/4 Cup Shredded Reduced Fat Cheddar Cheese
Chopped Cilantro


Directions:


1.  Whisk egg whites, egg, and milk in small bowl.


2.  Coat small nonstick skillet lightly with olive oil cooking spray.  Heat skillet over medium-high heat.  Add eggs to hot pan and cook for a few minutes, until eggs start to set.


3.  Warm bell pepper and onion in microwave for 30 seconds.  Spoon veggies and shredded cheese on top of egg mixture.  Season with your favorite spices and fold in half.  Garnish with cilantro.
